I want to make sure I understand how moves like Quick Attack and Bullet Punch are supposed to work. Because this is how I think they might work, but it sounds a little OP to me.
So lets say you have two Trainers, A and B. A has a Beedrill and B has a Rattatta
Both trainers roll for Initiative, A gets a 5 while B gets a 4. So the Initiative is A, then B.
Before A acts though, B decides to use Quick Attack. Allowing the Rattatta to attack out of turn. So the Ratatta Attacks with Quick Attack
It then goes to the Beedrill, who attacks
Then it goes back to the Ratatta.
Is this correct, or is there something I am missing?

You're half right - the Ratatta does get to cut in but doesn't get to go again within the same round. So normally:
Top of the Round is called Beedrill (Rolled a 5 on initiative) Ratatta (Rolled a 4)
But with a Priority Move, Ratatta is able to cut in and go first for this round. Or whenever. It can even start a beam struggle by saying that it's cutting off the Beedrill! But the round order looks like this during that round:
Top of the Round is called Ratatta (Used Quick Attack) Beedrill
