My single-type Pokémon evolved into a dual-type, but I don't plan to have a move of that new type. Does the STAB of my original moves, just... get weaker? Or it simply adds the "half-STAB" of the new type on top of my original "full-STAB"?

Yeah, if you go from a monotype to a dual-typed pokemon, your starting dice step for those types is reduced (or increased in the case of the new type) to D4.
The advantage of dual types is their ability to gain "half-stab" on 2 types rather than being shoehorned into full stab on 1, typically making them more versatile. Monotypes on the other hand more power in exchange for a bit less flexibility.

Damn, that really sucks... It just means my 'mon got straight up weaker after evolving.
